We’re enjoying another local(ish) Northamptonshire Gin, created by best friends Sion Edwards & Tom Warner. Their distillery is set in a family barn in the heart of Harrington and all their botanicals are sourced or grown within the farm itself. We had the privilege of meeting the lovely Alex who gave us a tour of the farm for us to witness for ourselves the hands on approach that goes into the distilling process and it was fascinating, a process that too often can go amiss. Sion & Tom opened their distillery in December 2012, four years after the initial project conversation!

Tom’s family are the 3rd generation to reside at Falls Farm and it’s the local sweet spring water that they use to filter through osmosis to cut back their gin. The team keep things local, and as custodians of the land, they harvest with a respect for nature and the community. Out of the eight copper plates, they use four in their ‘Curiosity’ still as well as a copper catalyser to ensure after the distillation process that the gin comes away as smooth as possible.

 

They certainly mastered this with their first born and global award winning Harrington Dry Gin, soft on the nose with warm citrus from the orange peel and piney juniper. Within less than 2 years, Warner Edwards Distillery had produced 28,000 bottles with excellent reviews and now very recognised industry awards. We served ours with orange peel, plenty of ice and Fever-Tree Indian Tonic but we’ve always been told it’s robust enough to be enjoyed as a martini. It’s orange forward for sure, but nutmeg, cardamom and juniper are most present while balancing out the flavour profile.

We certainly recommend for any gin fan as this smooth gin is a must for any collection! They have now added a Sloe gin, Rhubarb, Honeycomb (of which they collect their own fresh honey from on-site beehives) & Elderflower to the collection, so we look forward to updating you on these in the near future…
