THEIR METHOD

Pot distilling is the traditional method and how gin has always been made, where all botanicals are macerated in the pot and then boiled.

Column stills are a newer invention; Gracie’s column has 6 plates which purify the alcohol meaning we can make pure, smooth vodkas. Gracie is the name of Poetic License Distillery’s 500 litre hybrid still.

TO TASTE

A heavy juniper-driven start, finely balanced with green cardamom for a warm and spicy flavour. With undertones of lemon and eucalyptus, the inclusion of person lime intensifies the citrus notes while adding a hint of perfume. They like to keep their other botanicals a secret for now!

PERFECT SERVE

We totally agree with the distiller’s choice of serve; a premium tonic & a generous slice of grapefruit. We used a Fever-Tree Indian Tonic Water to help enhance the refreshing flavours of the gin.
